hi all,ive got another 2 muddies around a kilo each (not keen to weigh them until they've had their sleep in the freezer) and 2 good flatties that have been in the freezer for a couple of weeks,anyone got any good recipies i could try out??? im not a bad cook but when i make something up myself it tastes like shit,dont mind hot and spicy food either in fact the hotter the better :D

OK Gav - how about Bluecod's Chilli Mudcab in Black Bean Ginger and Egg sauce.

Here's how it goes

Ingredients.
2 mudcrabs - cleaned and dissected into portions [crack claws etc before cooking]
1/2 nob of garlic
4 or 5 birds-eye chillis
a piece of young ginger about the size of a lime
a heaped tablespoon of black beans
2 eggs
a heaped desertspoon of cornflour
salt to taste
two cups of water
half a cup of peanut oil

Preparation.
Finely chop - 1/2 knob of garlic, birds-eye chillis, ginger and black beans
In a dessert bowl break the two eggs and beat until yolks mix with the whites
In another bowl make a soft paste out of 1/4 cup water and cornflour

Method:
In a large wok heat on a high heat 1/2 cup of peanut oil until it is very hot
Add the garlic, ginger, chilli and black bean and stir.
Add the crab and fry until cooked
Remove the crab and place on a dish - lower the heat of the stove
Add one cup of water to the residue in the wok
Add the cornflour paste and remaining water and stir until it thickens
Taste test to check for flavour - add salt if required - bring back to the boil and whisk in the beaten eggs.
Add cooked crab to ensure it is hot [abt a minute] before serving with steamed rice and stir fried vegetables.

When cooked bring it over to my place and serve with cold beer. :D

thanks Bluecod,didnt have all the ingredients so i called me mum for the thai curry recipie mmmmmmmm turned out all i had to do was follow the directions on the jar :rolleyes: chop some stuff up and add cocconut milk,i printed yours out and will give it a go soon.thanks Gav
